Red Lentil and Vegetable Curry
A rich and spiced vegetarian Indian curry with red lentils, tomatoes, and fresh vegetables. Served with rice or Breton crêpes for a complete and flavorful meal.

Ingredients
- 150 g Red lentils
- 3 piece Tomatoes
- 2 stalk Celery
- 200 ml Tomato sauce
- 200 ml Coconut milk
- 3 tbsp Olive oil
- 2 tsp Curry powder
- 2 clove Garlic
- 1 piece Fresh ginger
- 1 pinch Salt
- 1 pinch Pepper
- 300 ml Water
Instructions
Step 1
Rinse the red lentils in cold water.
Step 2
Cut tomatoes and celery into small pieces. Mince garlic and ginger.
Step 3
Heat the oil in a pot and sauté garlic and ginger for 1 minute.
Step 4
Add the curry powder and cook for 1 minute while stirring.
Step 5
Pour in the lentils, tomato sauce, coconut milk, and water.
Step 6
Bring to a boil then add tomatoes and celery.
Step 7
Simmer for 20-25 minutes until the lentils are tender. Season with salt and pepper.
