Vegetable Curry with Couscous
A rich and flavorful vegetarian Indian curry made with fresh vegetables, served with fluffy couscous.

Ingredients
- 3 pieces Tomatoes
- 200 g Celery
- 150 g Couscous
- 500 ml Water
- 30 g Butter
- 2 tbsp Olive oil
- 2 tsp Curry powder
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Chop the tomatoes and celery into chunks.
Step 2
Heat the oil in a heavy pot and sauté the celery for 2-3 minutes.
Step 3
Add the curry powder and tomatoes, let simmer for 10 minutes.
Step 4
Meanwhile, bring the water to a boil with a pinch of salt and pour in the couscous, then remove from heat and cover for 5 minutes.
Step 5
Stir a knob of butter into the couscous and serve alongside the curry.
