Vegetable Curry with Rice and Yogurt
A simple and flavorful curry with vegetables from your fridge, seasoned with classic spices. Served with white rice and a dollop of fresh yogurt.

Ingredients
- 250 g Broccoli
- 200 g Carrots
- 200 g Potatoes
- 250 g White rice
- 200 g Plain yogurt
- 2 tbsp Olive oil
- 1.5 tsp Curry powder
- 200 ml Water or coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions.
Step 2
Meanwhile, cut the potatoes into small dice and the carrots into sticks. Cut the broccoli into small florets.
Step 3
In a pot or wok, heat the oil and toast the curry powder for 1 minute. Add the potatoes and carrots.
Step 4
Pour in the water or coconut milk, cover, and simmer for 10 minutes.
Step 5
Add the broccoli, season with salt and pepper. Cook for another 5 minutes until tender.
Step 6
Serve the curry over white rice with a dollop of plain yogurt on the side.
