Vegetable Curry with Rice
A flavorful curry featuring potatoes and carrots in a creamy, spiced sauce, served with plain rice.

Ingredients
- 400 g Potatoes
- 300 g Carrots
- 250 g White rice
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 clove Garlic
- 2 tbsp Olive oil
- 300 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package directions. Set aside.
Step 2
Peel and cut the potatoes and carrots into cubes. Slice the onion and mince the garlic.
Step 3
Heat the oil in a saucepan and sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder and cook for 1 minute, stirring constantly.
Step 5
Add the potatoes, carrots, coconut milk, and water. Bring to a boil and cook for 15-18 minutes until tender.
Step 6
Season with salt and pepper. Serve the curry over the rice.
