Vegetable Curry with Rice
A light and flavorful curry with broccoli, carrots, and potatoes. Served with white rice for a complete and comforting meal.

Ingredients
- 300 g Broccoli
- 250 g Carrots
- 300 g Potatoes
- 250 g White rice
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice in a pot according to package instructions (approximately 15-18 minutes).
Step 2
Meanwhile, peel and cut the onion, potatoes, and carrots into dice. Cut the broccoli into small florets.
Step 3
Sauté the onion in a pot or wok with oil for 2 minutes. Add the curry powder and mix.
Step 4
Add the potatoes, carrots, and broccoli. Cook for 8 minutes, stirring occasionally.
Step 5
Pour in the coconut milk, season with salt and pepper, and simmer for 10 minutes. Serve over rice.
