Vegetable Curry with Apples and Rice
A light and fruity curry with apples, carrots, and potatoes. Served with white rice for a complete and delicious meal.

Ingredients
- 400 g Potatoes
- 300 g Carrots
- 2 piece Apples
- 250 g White rice
- 500 ml Water
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 pinch Salt
- 2 tbsp Olive oil
Instructions
Step 1
Cook the rice according to the package instructions. Set aside.
Step 2
Peel and cut the potatoes, carrots, and apples into cubes.
Step 3
Heat the oil in a pot and sauté the curry powder for 1 minute.
Step 4
Add the potatoes and carrots, stir, and cook for 3 minutes.
Step 5
Pour in the coconut milk and water, add the apple cubes. Simmer for 15-20 minutes.
Step 6
Salt to taste. Serve the curry over the rice.
