Vegetable Curry with Apples and Coconut
A mild and flavorful curry with carrots, potatoes and apples in a creamy coconut sauce. Serve with white rice.

Ingredients
- 400 g Carrots
- 500 g Potatoes
- 200 g Apples
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 20 ml Oil
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Peel and cut carrots, potatoes, apples and onion into cubes.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder, stir, then add the carrots and potatoes.
Step 4
Pour in the coconut milk, salt to taste and simmer for 20 minutes.
Step 5
Add the apples 5 minutes before the end. Pepper to taste and serve hot.
