Curry of Vegetables with Apples and Coconut Milk
A mild and creamy curry made with potatoes, apples, and coconut milk. Served over rice, it's a complete and flavorful meal.

Ingredients
- 600 g Potatoes
- 250 g Apples
- 400 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 2 tbsp Oil
- 5 g Salt
- 2 g Pepper
- 250 g White rice
Instructions
Step 1
Cook the rice according to package instructions (simultaneously).
Step 2
Peel and cut potatoes into cubes, dice the onion, and cut the apples into pieces.
Step 3
Heat oil in a wok or large pot and sauté the onion for 2 minutes.
Step 4
Add curry powder and stir for 1 minute.
Step 5
Add potatoes, pour in coconut milk and 200ml water, then cook for 18-20 minutes.
Step 6
Add apples 5 minutes before the end, season with salt and pepper.
Step 7
Serve over hot white rice.
