Asian-Style Vegetable Curry Pasta

Ingredients
- 200 g Pasta
- 200 g Asparagus
- 200 g Tomato
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 unit Onion
- 2 clove Garlic
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the onion and garlic, cut the asparagus into pieces, and dice the tomatoes.
Step 2
Heat the oil in a pan and sauté the onion and garlic for 2 minutes.
Step 3
Add the curry paste and stir for 1 minute to infuse the oil.
Step 4
Pour in the coconut milk, asparagus, and tomatoes, and simmer for 15 minutes.
Step 5
Meanwhile, cook the pasta in salted boiling water.
Step 6
Season the curry with salt and pepper, then mix with the drained pasta.
