Vegetable and Lentil Curry
A colorful and fragrant Indian curry combining lentils, potatoes, carrots, and spinach. Served simply, it's a complete and flavorful everyday meal.

Ingredients
- 150 g Coral lentils
- 300 g Potatoes
- 2 pieces Carrots
- 100 g Fresh spinach
- 2 tbsp Olive oil
- 500 ml Water
- 1 tbsp Curry powder
- 1 piece Onion
- 1 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the onion, mince the garlic.
Step 2
Cut the potatoes and carrots into dice.
Step 3
In a saucepan, heat the oil and cook the onion and garlic for 2 minutes.
Step 4
Add the curry powder and stir for 1 minute.
Step 5
Add the potatoes, carrots, lentils, and water.
Step 6
Bring to a boil and simmer over medium heat for 18 minutes.
Step 7
Add the spinach, season with salt and pepper, and cook for 2 minutes.
Step 8
Serve hot.
