Vegetable Curry with Fruit
A vegetarian Asian curry where apples and pears bring sweetness and freshness. Served with plain rice.

Ingredients
- 2 pieces Apple
- 1 piece Pear
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 cloves Garlic
- 10 g Fresh ginger
- 2 tbsp Oil
- 1 pinch Salt
- 250 g Rice
- 500 ml Water
Instructions
Step 1
Cook the rice according to package instructions. Set aside.
Step 2
Mince the onion, garlic, and ginger. Peel and cut the apples and pears into cubes.
Step 3
Sauté the onion and garlic in the wok with oil. Add the curry paste, ginger, and fruit. Cook for 5 minutes.
Step 4
Add the coconut milk and water, then simmer for 15 minutes. Season with salt.
Step 5
Serve the curry over the rice.
