Vegetable Curry with Rice
A colorful Asian curry with carrots, broccoli, and cauliflower in a creamy sauce. Vegetarian, flavorful, and comforting.

Ingredients
- 150 g White rice
- 150 g Carrots
- 150 g Broccoli
- 150 g Cauliflower
- 2 tsp Curry powder
- 200 ml Coconut milk
- 250 ml Water
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice in boiling salted water for 18 minutes.
Step 2
Cut the vegetables into small pieces (carrots into dice, broccoli and cauliflower into florets).
Step 3
Sauté the vegetables in a pot with oil for 5 minutes.
Step 4
Add the curry powder, pour in the coconut milk and simmer for 12 minutes. Season to taste.
Step 5
Serve the curry over the cooked rice.
