Vegetable Curry with Quinoa
A flavorful and healthy Asian curry with broccoli, cauliflower and carrots, served over quinoa.

Ingredients
- 100 g Quinoa
- 150 g Broccoli
- 150 g Cauliflower
- 100 g Carrots
- 200 ml Coconut milk
- 1 tbsp Red curry paste
- 1 tbsp Olive oil
- 200 ml Water
- 1 pinch Salt
Instructions
Step 1
Bring water to a boil and cook the quinoa according to package directions.
Step 2
Cut the vegetables into small uniform pieces.
Step 3
Heat the oil in a pot and cook the curry paste for 1 minute.
Step 4
Add the vegetables and sauté for 5 minutes, stirring.
Step 5
Pour in the coconut milk and water, cover and simmer for 10 minutes.
Step 6
Serve the curry over the cooked quinoa.
