Vegetable Curry with Quinoa

Ingredients
- 100 g Quinoa
- 200 g Broccoli
- 150 g Carrots
- 150 g Cauliflower
- 300 ml Water
- 2 tbsp Olive oil
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 tsp Salt
- 2 clove Garlic
- 1 tbsp Fresh ginger
Instructions
Step 1
Rinse the quinoa and cook it in salted water for 15 minutes.
Step 2
Meanwhile, cut the vegetables into even pieces.
Step 3
Heat the olive oil in a saucepan and add the garlic and ginger.
Step 4
Add the curry paste and mix well for 1 minute.
Step 5
Pour in the coconut milk and bring to a boil, then add the vegetables.
Step 6
Simmer for 10 minutes until the vegetables are tender.
Step 7
Serve the curry over the cooked quinoa.
