Vegetable Curry with Coconut Milk and Rice
A delicious vegetarian Indian curry with carrots, mushrooms, and rice. Flavorful and comforting, perfect for a weeknight dinner.

Ingredients
- 200 g Rice
- 150 g Carrots
- 150 g Mushrooms
- 200 ml Coconut milk
- 1.5 tsp Curry powder
- 1 tbsp Oil
- 200 ml Water
- 1 pinch Salt
Instructions
Step 1
Start cooking the rice according to instructions (approximately 15-20 minutes).
Step 2
Cut the carrots into even dice and slice the mushrooms.
Step 3
Sauté the carrots in oil in a Dutch oven for 3 minutes.
Step 4
Add the curry powder and cook for 1 minute, stirring.
Step 5
Add the mushrooms and water, cover, and cook for 5 minutes.
Step 6
Pour in the coconut milk, season with salt, and simmer covered for 10 minutes.
