Coconut Curry with Vegetables
A light and flavorful Indian curry featuring vegetables, coconut milk, and aromatic spices. A balanced and delicious dish ready in 30 minutes.

Ingredients
- 400 ml Coconut milk
- 1 unité Onion
- 2 clove Garlic
- 1 unité Carrot
- 1 unité Bell pepper
- 200 g Canned chickpeas
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the onion, garlic, carrot, and bell pepper into small pieces.
Step 2
Heat the oil in a Dutch oven or large skillet, sauté the onion and garlic for 2 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the carrot and bell pepper, cook for 5 minutes while stirring.
Step 5
Pour in the coconut milk and add the drained chickpeas.
Step 6
Simmer for 10 minutes over medium heat, season with salt and pepper.
Step 7
Serve hot with rice or on its own.
