Coconut Curry with Vegetables
A creamy Asian curry made with whatever vegetables you have on hand and coconut milk. Served over rice, it's a complete and satisfying meal.

Ingredients
- 200 g Carrots
- 150 g Cauliflower
- 100 g Broccoli
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 150 g White rice
- 1 piece Onion
- 2 tbsp Olive oil
- à volonté pinch Salt
- 300 ml Water
Instructions
Step 1
Cook the rice according to package instructions (approximately 15 minutes).
Step 2
Cut carrots into sticks, cut cauliflower and broccoli into small florets, and mince the onion.
Step 3
Heat the oil in a saucepan and sauté the onion for 2 minutes.
Step 4
Add the curry paste and stir for 1 minute.
Step 5
Pour in the coconut milk and water, and bring to a gentle simmer.
Step 6
Add all the vegetables and simmer for 15 minutes until tender.
Step 7
Season with salt to taste and serve the curry over hot rice.
