Vegetable Curry with Coconut and Pasta
An easy Asian-inspired curry with whatever vegetables you have on hand and coconut milk. Flavorful and exotic, serve it over a bed of pasta for a complete meal.

Ingredients
- 200 g Broccoli
- 200 g Cauliflower
- 150 g Carrots
- 150 g Pasta
- 400 ml Coconut milk
- 20 ml Oil
- 1200 ml Water
- 2 tsp Curry powder
- 1 pinch Salt
- 2 clove Garlic
Instructions
Step 1
Cut the broccoli, cauliflower and carrots into small pieces. Mince the garlic.
Step 2
Bring salted water to a boil and cook the pasta for 10 minutes.
Step 3
Heat the oil in a pan and sauté the garlic for 1 minute.
Step 4
Add the curry powder and cook for 30 seconds to release the flavors.
Step 5
Add the vegetables and cook for 5 minutes, stirring.
Step 6
Pour in the coconut milk, bring to a simmer and let cook for 8-10 minutes.
Step 7
Drain the pasta and serve the curry over it.
