Dark Chocolate Vegetable Curry
An original Asian curry featuring broccoli, cauliflower, and carrots, enriched with dark chocolate for added depth. Served over rice or quinoa.

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 150 g Carrots
- 30 g Dark chocolate
- 3 tbsp Olive oil
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 medium Onion
- 2 clove Garlic
- à volonté pinch Salt
Instructions
Step 1
Peel and slice the onion, mince the garlic.
Step 2
Heat the olive oil in a pot and sauté the onion and garlic for 2 minutes.
Step 3
Add the curry powder and stir for 1 minute to release the aromas.
Step 4
Cut the vegetables into small pieces and add to the pot. Pour in the coconut milk.
Step 5
Simmer for 15 minutes until the vegetables are tender.
Step 6
Add the grated dark chocolate, stir well until melted. Season with salt and serve hot over rice.
