Asian Vegetable Curry with Chocolate
A surprising and flavorful Asian curry blending carrots, broccoli, and cauliflower with a subtle hint of dark chocolate. Served over quinoa for perfect balance.

Ingredients
- 150 g Carrots
- 200 g Broccoli
- 150 g Cauliflower
- 100 g Quinoa
- 30 g Dark chocolate
- 2 tbsp Olive oil
- 400 ml Water
- 1 tsp Salt
- 1 pinch Pepper
- 1.5 tbsp Curry powder
- 200 ml Coconut milk
Instructions
Step 1
Rinse the quinoa and cook it with 200ml of water for 15 minutes. Let it rest.
Step 2
Cut the carrots into sticks, and cut the broccoli and cauliflower into small florets.
Step 3
Heat the olive oil in a saucepan and toast the curry powder for 1 minute.
Step 4
Add the vegetables, 200ml of water, and the coconut milk. Simmer for 15 minutes.
Step 5
Finely grate the dark chocolate and add it to the curry at the end of cooking. Season to taste.
Step 6
Serve the curry over a bed of quinoa.
