Asian Vegetable Curry
A mild and fragrant curry with lentils, potatoes, carrots, and spinach. Served with white rice for a complete and delicious meal.

Ingredients
- 150 g Red lentils
- 300 g Potatoes
- 200 g Carrots
- 100 g Fresh spinach
- 400 ml Coconut milk
- 2 tbsp Curry paste
- 200 ml Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 200 g White rice
Instructions
Step 1
Cook the rice according to package directions.
Step 2
Peel and cut the potatoes and carrots into small dice.
Step 3
Sauté the curry paste in oil in a skillet for 1 minute.
Step 4
Add the diced potatoes and carrots, cook for 3 minutes.
Step 5
Pour in the coconut milk, water, and lentils. Bring to a simmer.
Step 6
Simmer for 10 minutes until the vegetables are tender.
Step 7
Add the fresh spinach and cook for 2 minutes. Season with salt to taste.
Step 8
Serve the curry over white rice.
