Vegetable Curry with Semolina
A delicious vegetarian curry featuring creamy semolina infused with aromatic spices. Serve with vegetables for a colorful and flavorful plate.

Ingredients
- 150 g Semolina
- 3 piece Tomatoes
- 2 stalk Celery stalks
- 200 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 400 ml Vegetable broth
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and thinly slice the onion, then sauté it in hot oil in a Dutch oven.
Step 2
Add the curry powder and stir well for 1 minute.
Step 3
Dice the tomatoes and celery, add them to the curry along with the broth and coconut milk.
Step 4
Simmer for 10 minutes, then sprinkle in the semolina while stirring constantly.
Step 5
Cook for an additional 10 minutes until thickened, season to taste, and serve hot.
