Vegetable Curry with Couscous
A fragrant vegetarian curry served over fluffy couscous. Easy to prepare and delicious using common supermarket spices.

Ingredients
- 250 g Couscous
- 2 stalk Celery
- 3 piece Tomatoes
- 1 piece Avocados
- 250 ml Tomato sauce
- 3 tbsp Olive oil
- 2 tsp Curry powder
- 250 ml Water
- 1 pinch Salt
- 1 pinch Black pepper
Instructions
Step 1
Bring salted water to a boil and pour in the couscous. Let it swell for 5 minutes off the heat. Set aside.
Step 2
Slice the celery and cut the tomatoes into cubes. Slice the avocado into thin slices.
Step 3
Heat the celery in oil in a skillet or wok over medium heat for 3 minutes.
Step 4
Add the curry powder and cook for 1 minute. Pour in the tomato sauce and diced tomatoes. Simmer for 10 minutes.
Step 5
Serve the curry over a bed of fluffy couscous, garnished with fresh avocado slices.
