Vegetable Curry with Semolina
A mild and flavorful curry with tomatoes and celery, served with semolina on the side: a simplified and comforting Indian dish.

Ingredients
- 400 g tomatoes
- 200 g celery
- 200 g semolina
- 200 ml coconut milk
- 1 piece onion
- 2 tsp curry powder
- 2 tbsp oil
- 400 ml water
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Finely chop the onion and celery into small cubes.
Step 2
Heat the oil in a large pot and sauté the onion and celery for 3 minutes.
Step 3
Add the curry powder and mix for 1 minute to fully incorporate.
Step 4
Add the crushed tomatoes (fresh or canned) and simmer for 5 minutes.
Step 5
Pour in the coconut milk and water, season with salt and pepper. Cover and simmer for 10 minutes.
Step 6
Meanwhile, prepare the semolina: pour boiling water over it with salt and butter, and let it sit for 5 minutes.
Step 7
Serve the curry poured over the semolina.
