Vegetable Curry with Semolina
An easy vegetarian curry featuring creamy semolina, tomatoes, and whatever vegetables you have on hand. Served with roasted vegetables for extra flavor.

Ingredients
- 150 g Semolina
- 300 g Tomatoes
- 150 g Celery stalks
- 200 ml Coconut milk
- 1 piece Onions
- 2 cloves Garlic
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Mince the onion and garlic, cut the celery into dice, and chop the tomatoes into chunks.
Step 2
Sauté the onion and garlic in a Dutch oven with oil for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute to toast it.
Step 4
Pour in the coconut milk, tomatoes, and celery. Simmer covered for 15 minutes.
Step 5
Meanwhile, prepare the semolina according to package directions (soaking or quick cooking).
Step 6
Season the curry with salt and pepper, and serve over a bed of semolina.
