Coconut Vegetable Curry
A flavorful and mildly spiced curry with potatoes and carrots, enriched with coconut milk and white rice. A comforting and indulgent recipe.

Ingredients
- 400 g Potatoes
- 250 g Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 250 g White rice
- 20 ml Olive oil
- 5 g Salt
- 500 ml Water
Instructions
Step 1
Cook the white rice according to package directions.
Step 2
Peel and cut the potatoes, carrots and onion into small pieces.
Step 3
Heat the oil in a pan and sauté the onion and curry paste for 2 minutes.
Step 4
Add the potatoes and carrots, mix well and cook for 8 minutes.
Step 5
Pour in the coconut milk and water, bring to a boil and simmer for 15 minutes until the vegetables are tender.
Step 6
Season with salt to taste and serve with hot white rice.
