Indian-Style Vegetable Curry
A flavorful and colorful curry with potatoes, carrots, spinach and a blend of classic spices. Served with white rice for a complete and satisfying meal.

Ingredients
- 400 g Potatoes
- 250 g Carrots
- 200 g Fresh spinach
- 400 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 2 clove Garlic
- 3 tbsp Olive oil
- à volonté g Salt
- à volonté g Pepper
- 250 g White rice
Instructions
Step 1
Cook the white rice according to package instructions.
Step 2
Cut the potatoes and carrots into cubes. Mince the onion and garlic.
Step 3
Heat the oil in a Dutch oven. Sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder and cook for 1 minute to infuse the oil.
Step 5
Add the potatoes and carrots, mix well. Pour in the coconut milk.
Step 6
Simmer for 15 minutes until the vegetables are tender.
Step 7
Stir in the spinach at the end of cooking, season with salt and pepper.
Step 8
Serve the curry over hot white rice.
