Indian-Style Vegetable Curry
A creamy curry with carrots and celery, spiced with curry powder. Served over white rice or with homemade or store-bought naan bread.

Ingredients
- 3 pieces Carrots
- 2 sprigs Celery stalk
- 1.5 tbsp Curry powder
- 1 piece Onion
- 200 ml Coconut milk
- 2 tbsp Oil
- 200 ml Water
- 1 pinch Salt
- 200 g White rice
Instructions
Step 1
Cook the white rice according to package instructions.
Step 2
Peel and cut the carrots into chunks, celery into pieces, and slice the onion.
Step 3
Sauté the onion in oil over medium heat for 2 minutes.
Step 4
Add the curry powder and stir for 1 minute to lightly toast it.
Step 5
Add the carrots and celery, stir-fry for 3 minutes.
Step 6
Pour in the coconut milk and water, bring to a boil then simmer for 15 minutes.
Step 7
Season with salt and serve the curry over white rice.
