Indian-Style Vegetable Curry

Ingredients
- 400 g Potatoes
- 200 g Carrots
- 2 tbsp Oil
- 400 ml Water
- 1 pinch Salt
- 1 pinch Pepper
- 2 tsp Curry powder
- 1 piece Onion
Instructions
Step 1
Peel and cut the potatoes and carrots into cubes. Mince the onion.
Step 2
Heat the oil in a large pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder and stir for 1 minute to release the aromas.
Step 4
Add the vegetables, cover with water, and bring to a boil.
Step 5
Reduce heat and simmer for 20 minutes until vegetables are tender. Season with salt and pepper.
