Simple Thai Shrimp Curry
An easy and flavorful Thai curry with shrimp, everyday vegetables, and a creamy coconut milk sauce.

Ingredients
- 300 g Shrimp
- 250 g Broccoli
- 150 g Carrot
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
Instructions
Step 1
Peel and slice the onion. Cut the carrots into rounds and the broccoli into florets.
Step 2
Heat the oil in a skillet or pot and sauté the onion for 2 minutes.
Step 3
Add the curry paste and stir well for 1 minute.
Step 4
Add the carrots and broccoli and cook for 5 minutes.
Step 5
Pour in the coconut milk and add the shrimp. Cook for 6-7 minutes until the shrimp turn pink.
Step 6
Season with salt and serve with rice or bread.
