Shrimp Curry with Rice

Ingredients
- 250 g Shrimp
- 150 g Rice
- 200 ml Coconut milk
- 100 g Carrots
- 1 piece Red bell pepper
- 1 piece Onion
- 2 tbsp Curry paste
- 1 tbsp Oil
- 1 pinch Salt
- 300 ml Water
Instructions
Step 1
Cook the rice in salted water.
Step 2
Sauté the chopped onion and carrots in hot oil.
Step 3
Add the curry paste and stir for 1 minute.
Step 4
Pour in the coconut milk and add the shrimp.
Step 5
Cook for 5 minutes until the shrimp turns pink.
Step 6
Serve the curry over the rice.
