Shrimp and Rice Curry
A quick and flavorful Asian curry with tender shrimp, carrots, and rice. Exotic and satisfying without fuss.

Ingredients
- 400 g Shrimp
- 250 g Rice
- 200 g Carrots
- 200 ml Coconut milk
- 1 piece Onion
- 2 tbsp Curry paste
- 2 tbsp Oil
- 1 pinch Salt
- 400 ml Water
Instructions
Step 1
Cook the rice according to package instructions.
Step 2
Slice the onion and cut the carrots into small dice.
Step 3
Heat the oil in a skillet, sauté the onion and curry paste for 2 minutes.
Step 4
Add the carrots, cook for 3 minutes, then add the shrimp.
Step 5
Pour in the coconut milk, bring to a simmer and cook for 6 minutes. Season with salt.
Step 6
Serve the curry over hot rice.
