Shrimp and Vegetable Curry
A savory and spiced Asian curry made with coconut milk and aromatic spices. A delicious dish to serve over rice or with bread.

Ingredients
- 300 g Shrimp
- 250 g Broccoli
- 200 g Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 clove Garlic
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Finely mince the onion and garlic
Step 2
Cut the broccoli into florets and the carrot into sticks
Step 3
Heat the oil in a saucepan and sauté the onion and garlic for 2 minutes
Step 4
Add the curry paste and cook for 1 minute
Step 5
Pour in the coconut milk and add the vegetables, simmer for 8 minutes
Step 6
Add the shrimp and cook for 5 more minutes
Step 7
Season with salt and pepper, and serve hot
