Shrimp Curry with Penne
A creamy Asian-style curry with shrimp served over pasta for extra indulgence. Exotic and ready in 25 minutes.

Ingredients
- 300 g Peeled shrimp
- 150 g Penne
- 200 ml Coconut milk
- 1.5 tbsp Red curry paste
- 0.5 piece Onion
- 2 clove Garlic
- 1 tbsp Oil
- 0.5 piece Lemon juice

Instructions
Step 1
Bring a pot of salted water to boil for the pasta.
Step 2
Mince the onion and garlic. Sauté them in a wok with the oil.
Step 3
Add the curry paste and stir well for 1 minute.
Step 4
Pour in the coconut milk and bring to a gentle simmer.
Step 5
Add the shrimp and cook for 4-5 minutes until they turn pink.
Step 6
Meanwhile, cook the penne according to package directions.
Step 7
Finish the curry with lemon juice, salt, and pepper. Serve over the pasta.
