Shrimp Curry with Carrots
A light and flavorful curry with shrimp, carrots, and coconut milk. Simple and easy to prepare, this exotic dish makes a wonderful weeknight dinner.

Ingredients
- 250 g Shrimp
- 2 piece Carrot
- 200 ml Coconut milk
- 1 tbsp Oil
- 1 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots into sticks.
Step 2
Heat the oil in a pot and sauté the carrots for 4 minutes.
Step 3
Sprinkle with curry powder and stir well for 1 minute.
Step 4
Pour in the coconut milk and simmer for 8 minutes.
Step 5
Add the shrimp and cook for another 5-6 minutes until cooked through.
Step 6
Season with salt and pepper to taste, then serve.
