Coconut Shrimp Curry
A creamy and flavorful Asian curry with shrimp, broccoli, and carrot. Served with rice, it's a delightful everyday meal.

Ingredients
- 350 g Shrimp
- 300 g Broccoli
- 200 g Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 100 g Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Mince the onion and cut the vegetables into small pieces.
Step 2
Heat the oil in a pot and sauté the onion.
Step 3
Add the curry paste and mix well for 1 minute.
Step 4
Pour in the coconut milk and add the vegetables, simmer for 10 minutes.
Step 5
Add the shrimp and cook for 5 more minutes.
Step 6
Season to taste and serve hot with rice.
