Coconut Curry Zucchini
A mild and flavorful Indian-style curry, the perfect blend of zucchini and creamy coconut milk served with rice or naan for dipping.

Ingredients
- 500 g Zucchini
- 100 g Lettuce
- 400 ml Coconut milk
- 2 tbsp Olive oil
- 1 medium Onion
- 2 clove Garlic
- 1 tbsp Curry powder
- 1 tsp Fresh ginger
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut zucchini into cubes and thinly slice the onion.
Step 2
Finely chop garlic and ginger.
Step 3
Heat oil in a wok or pot and sauté onion and garlic.
Step 4
Add curry powder and ginger, stir well for 1 minute.
Step 5
Add zucchini and cook 5 minutes while stirring.
Step 6
Pour in coconut milk and chopped lettuce, then simmer over medium heat for 15 minutes.
Step 7
Season with salt and pepper, then serve hot with rice or bread.
