Red Lentil and Zucchini Curry
A simple and comforting Indian curry combining zucchini and red lentils in a spiced broth. Nourishing, flavorful and ready in 25 minutes.

Ingredients
- 2 medium Zucchini
- 150 g Red lentils
- 2 tbsp Olive oil
- 1 medium Onion
- 2 clove Garlic
- 1.5 tsp Curry powder
- 400 ml Water or broth
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Finely mince the onion and garlic. Cut the zucchini into dice.
Step 2
Heat the oil in a pot or large saucepan over medium heat.
Step 3
Sauté the onion and garlic for 2-3 minutes until translucent.
Step 4
Add the curry powder, stir well and cook for 1 minute.
Step 5
Add the red lentils, zucchini and water or broth. Season with salt and pepper.
Step 6
Bring to a boil, then reduce heat and simmer for 15-18 minutes until the lentils are tender and the liquid is absorbed.
Step 7
Adjust seasoning and serve hot.
