Cauliflower and Chickpea Curry
A savory Indian curry with cauliflower, chickpeas, and a rich coconut cream sauce. Indulgent and satisfying, ready in 30 minutes.

Ingredients
- 300 g Cauliflower
- 200 g Canned chickpeas
- 200 ml Coconut cream
- 1 piece Onion
- 150 g Carrots
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 200 ml Water
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Cut the cauliflower into small florets, slice the carrots into batons, and mince the onion.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute, stirring.
Step 4
Add the cauliflower and carrots, mix well to coat with curry.
Step 5
Pour in the water and coconut cream, bring to a boil, and simmer for 12 minutes.
Step 6
Add the drained chickpeas, cook for 2 more minutes. Season with salt and pepper to taste.
Step 7
Serve hot with rice or quinoa if desired.
