Cauliflower and Chickpea Curry
A mild and flavorful Asian curry with cauliflower, chickpeas, and coconut milk. Served with steamed white rice.

Ingredients
- 500 g Cauliflower
- 400 g Chickpeas
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
- 200 ml Water
- 250 g White rice
Instructions
Step 1
Start cooking the rice according to package instructions.
Step 2
Cut the cauliflower into small florets. Mince the onion and crush the garlic.
Step 3
Heat the olive oil in a pot and sauté the onion and garlic for 2 minutes.
Step 4
Add the curry powder and stir for 30 seconds until fragrant.
Step 5
Add the cauliflower, drained chickpeas, coconut milk, and water. Bring to a boil.
Step 6
Simmer for 12-15 minutes until the cauliflower is tender. Season with salt and pepper.
Step 7
Serve the curry over the rice.
