Cauliflower and Banana Curry with Red Lentil Sauce
An original Franco-Asian fusion where caramelized cauliflower meets the sweetness of banana in a subtle curry, complemented by a rich red lentil sauce. An exotic and surprising dish that perfectly balances sweet and savory flavors.
Ingredients
- 450 g Cauliflower
- 3 piece Bananas
- 200 g Red lentils
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 10 g Fresh ginger
- 3 tbsp Olive oil
- 400 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the red lentils in a pot with 400ml of water for 20 minutes.
Step 2
Cut the cauliflower into florets, peel and slice the bananas.
Step 3
Mince the onion and garlic, grate the ginger.
Step 4
Heat the oil in a pan and sauté the onion, garlic, and ginger for 2 minutes.
Step 5
Add the curry powder and cauliflower, cook for 10 minutes while stirring regularly.
Step 6
Stir in the cooked lentils and coconut milk, gently add the bananas.
Step 7
Simmer for 5 minutes, season to taste, and serve.
