Curry of Carrots, Apples and Potatoes
A mild and flavorful curry with vegetables and fruit cooked Indian-style. Rich in flavor and ready in less than 35 minutes.

Ingredients
- 400 g Potatoes
- 250 g Carrots
- 200 g Apples
- 400 ml Coconut milk
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the onion, cut the potatoes and carrots into cubes, and chop the apples into pieces.
Step 2
Heat the oil in the pan and sauté the onion for 2-3 minutes.
Step 3
Add the curry powder and stir for 1 minute to release the aromas.
Step 4
Add the potatoes and carrots, pour in the coconut milk and water (200ml), and bring to a simmer.
Step 5
Add the apples and cook for another 5-8 minutes until everything is tender. Season with salt and pepper.
Step 6
Serve hot with white rice or flatbread.
