Carrot and Potato Curry
A mild and flavorful curry made with carrots and potatoes, enriched with coconut milk and aromatic spices. A comforting Asian dish.

Ingredients
- 400 g Carrots
- 400 g Potatoes
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots and potatoes into equal-sized cubes. Slice the onion thinly.
Step 2
Heat the oil in a pan and cook the onion for 2 minutes.
Step 3
Add the curry paste and cook for 1 minute to infuse well.
Step 4
Add the vegetables and coconut milk. Bring to a boil then reduce the heat.
Step 5
Simmer for 15 minutes until the vegetables are tender. Season with salt and pepper.
