Curried Carrots and Potatoes
A flavorful and colorful Asian curry with tender vegetables in a creamy sauce. Served with rice, it's a complete meal.

Ingredients
- 400 g Carrots
- 350 g Potatoes
- 1 piece Onion
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut carrots and potatoes into small cubes. Finely chop the onion.
Step 2
Heat the oil in a saucepan and sauté the onion for 2 minutes.
Step 3
Add the curry paste, stir for 1 minute. Pour in the coconut milk.
Step 4
Add the carrots and potatoes, cook for 20 minutes until tender. Season with salt and pepper.
