Carrot and Potato Curry
A simple and flavorful vegetable curry with a gentle heat that's warming and satisfying. Serve with white rice.

Ingredients
- 400 g carrots
- 400 g potatoes
- 1 piece onion
- 2 tbsp curry powder
- 400 ml coconut milk
- 2 tbsp oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Peel and cut the carrots and potatoes into cubes. Chop the onion.
Step 2
Sauté the onion in oil in a pan for 2 minutes, then add the curry powder.
Step 3
Add the carrots and potatoes, stir well for 2 minutes.
Step 4
Pour in the coconut milk, season with salt and pepper, and bring to a boil.
Step 5
Reduce the heat and simmer for 18-20 minutes until the vegetables are tender.
