Carrot and Celery Curry
A mild and comforting Indian curry with everyday vegetables and homemade coconut milk (oat flakes + water). Ready in 25 minutes.

Ingredients
- 300 g Carrots
- 150 g Celery stalks
- 3 tbsp Oat flakes
- 1 tsp Curry powder
- 300 ml Water
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut carrots and celery into uniform pieces.
Step 2
Soak the oat flakes in 150 ml of water for 2 minutes to create a cream.
Step 3
Heat the oil in a pot and sauté the carrots and celery for 3 minutes.
Step 4
Sprinkle with curry powder, stir well, and cook for 1 minute.
Step 5
Add 150 ml of water and the oat cream, season with salt and pepper.
Step 6
Simmer covered for 10 minutes until the vegetables are tender.
Step 7
Serve hot as a side dish or on its own with bread.
