Carrot Curry with Oats
A simplified and comforting Indian-style curry with tender carrots and oats for added body. Perfect for a light dinner.

Ingredients
- 400 g Carrots
- 80 g Oat flakes
- 2 tsp Curry powder
- 400 ml Water
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and slice the carrots into rounds.
Step 2
Heat the oil in a saucepan and add the curry powder. Sauté for 1 minute.
Step 3
Add the carrots and mix well to coat with the spice.
Step 4
Pour in the water and bring to a boil.
Step 5
Reduce heat and simmer for 12 minutes until the carrots are tender.
Step 6
Stir in the oat flakes and mix. Cook for 2 more minutes. Season to taste.
