Carrot and Potato Curry
A simple and flavorful Asian curry made with coconut milk, carrots, and potatoes. A comforting and exotic dish ready in 30 minutes.

Ingredients
- 400 g Carrots
- 400 g Potatoes
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut carrots, potatoes, and onion into uniform dice.
Step 2
Heat the oil in a saucepan over medium heat and sauté the onion for 2 minutes.
Step 3
Add the curry paste and stir for 1 minute to incorporate well.
Step 4
Add carrots and potatoes, stirring well so they are coated with curry.
Step 5
Pour in the coconut milk, season with salt and pepper. Bring to a boil.
Step 6
Reduce heat and simmer for 12-15 minutes until the vegetables are tender.
