Indian Carrot and Avocado Curry
A quick vegetarian curry with tender carrots and avocado for richness. Served with oat flakes for an unexpected but delicious twist.

Ingredients
- 3 piece Carrots
- 2 tsp Curry
- 100 g Oat flakes
- 1 piece Avocado
- 400 ml Water
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the carrots into thin rounds.
Step 2
Heat the oil in a skillet and toast the curry for 30 seconds to release the aromas.
Step 3
Add the carrots and cook for 5 minutes, stirring.
Step 4
Pour in the water and oat flakes. Simmer for 6 minutes until thickened.
Step 5
Stir in the avocado mashed with a fork, gently combine, and season with salt and pepper.
