Broccoli and Cauliflower Curry
A mild and delicious Asian curry with coconut milk, broccoli, and cauliflower, served over rice or quinoa.

Ingredients
- 300 g Broccoli
- 250 g Cauliflower
- 200 g Quinoa
- 400 ml Coconut milk
- 400 ml Water
- 2 tsp Curry powder
- 1 tbsp Olive oil
- 1 pinch Salt
Instructions
Step 1
Cook the quinoa in 400ml of water for 15 minutes according to package instructions.
Step 2
Cut the broccoli and cauliflower into small florets.
Step 3
Heat the olive oil in a saucepan, add the curry powder, and cook for 1 minute.
Step 4
Add the vegetables and coconut milk, cook for 12-15 minutes until the vegetables are tender. Season to taste.
Step 5
Serve the curry over the hot quinoa.
